Bolo chocolate com chantilly e morangos / Chocolate cake with Chantilly and strawberry´s

Tirar do forno e deixar arrefecer numa grelha.

Let them melt au bain-marie (water bath) stirring ocasionaly with a spatula or wooden spoon until it looks smooth and silky. Add the sugar and mix very well.

Pré-aqueçer o forno a 170ºC.

Agora, separadamente, noutra taça misturar a canela moída, a farinha e o açúcar amarelo.

In English

In the pantry, for some time now, we had some packets of dried apricots and prunes, which had do be used ASAP. So what better way to use them up, then making a cake!
This cake is so yummy ! St first I thought, humm.... fruit cake ??? but after tasting it, I was hooked, especially with a good cup tea. Just heavenly!!!
The secret is that the cake is really moist and the fruits are soaked is very strong black tea.
Hope you try making it!

Ingredients:

3/4 cup dried prunes ( stones removed)
3/4 cup dried apricots
170g  butter ( room temperature)
3/4 (or 150g) cup white sugar (caster sugar)
3 eggs
2 (or 300g) cups self raising flour
1/2 teaspoon salt
1/2 cup of milk
1 Litro ( or more ) of very strong black tea

Separately:
1/2 cup brown sugar
1 tablespoon ground cinnamon
1 tablespoon flour

Method:

Chop the dried fruits into very small pieces and cover with cold black tea. Leave for a few hours or overnight to soak.
Pré-heat the oven to 170ºC and butter and flour a cake tin ( preferably a cake ring mould).
With the help of the electric whisk, cream butter and sugar until light and fluffy.
Add the eggs, one at a time, and beat well after each adition.
Add dry ingredient and beat well. Add milk and mix well.
Finally add the very well drained fruit and mix with a spatula.

Separately, prepare the following mixture and have it ready with the greased cake tin.
In a separate bowl, mix the flour, cinnamon and brown sugar.

Put 1/3 of cake batter in the tin and sprinkle with 1/3 of the cinnamon, flour mixture.
Repeat two times, ending with the cinnamon, flour mixture.

Bake for 45-60 minutes at 170ºC. Check to see if the cake is done, by stiking a skewer in the center of the cake. If it comes out clean, it´s done. If not, let is bake for another 5-10 minutes and check again.

Suggestion: My mom´s suggested (and very well !) to double all the ingredients, except the amount of dried fruit. Because otherwise, you will have a lot of fruit compared to the quantity of batter!

Pão-de-ló do Le Cordon Bleu / Biscuit ( sponge cake) from Le Cordon Bleu

Ingredientes:

Pão-de-ló básico                                                   Recheio
4 ovos inteiros                                                          400ml  natas (2 pacotes)

Montagem do bolo

In English

I have many cooking and baking books, but one my favorites is this one from Le Cordon Bleu, " Culinary techniques", it explaines everything about food and all the basic techniques and much more. It is an excellent  investiment.
This recipe if from that book, in the section of Cakes&Cookies. It is a really good recipe and you can serve it in many different ways, filled with whipped cream or a raspberry mousse ou simply soaked in  sugar syrup... in a thousand different ways.
I baked this cake for my dad´s birthday ( he has a very big sweet tooth!) and the result is as you can see in the picture:

Ingredients:

Biscuit /Sponge Cake                                           Filling
4 eggs                                                                      400ml  double cream
120g caster sugar                                                    2 table spoons of icing sugar
120g self rising flour                                                1 can of sweet pineapple in syrup
Pinch of salt                                                            1 can of peaches in syrup
                                                                              3 kiwis, in slices

Preparation:

Sponge Cake

Butter and dust a 20cm cake tin and line the bottom with parchement paper. Pré-heat the oven to 170ºC.
Put the eggs in a bowl and using an electric whisker, beat vigorously for a few seconds to break up the eggs and then add the sugar.
Put the bowl over a pan with boiling water ( I usually boil the water in my ketle and then put it in a big sauce pan), but don´t let the bowl touch the water or it will cook the misture. Continue beating until the mixture thickens enough so it leaves a trail of an 8 figure when you lift up the whisk.
Take the bowl out of the heat and continue beating until it´s very thick, 3 to 5 minutes.
Add the pinch of salt and the flour in small amounts with a spatula. Mix the flour in a figure of 8 movements with the spatula, so the air doesn´t get knocked out.
Pour the mixture slowly in the cake tin and spread it if necessary with a spatula and bake for around 25 minutes at 170ºC until golden.
When baked, the cake should be golden, risen and firm, but flexible to the touch.
Take the cake out of the tin and leave to cool on a metal cake rack. It renders 6-8 slices.

Filling
In a bowl whip the cream with the icing sugar.
Open the fruit cans and slice the fruit. Keep the pineapple juice to soaked the cake.

Cake assembly

When the cake is cold, cut it horizontally into two.As you can see from my cake in the picture, I did not cut it in two, because I baked it in a shallow rectangular cake tin.
Soaked both of cake halves with the pineapplejuice syrup, and let it soak up all of it for 30minutes.
Sandwich the layers together with the whipped cream. Use the rest of the whipped cream to cover the top and sides of the cake and decorate with slivered almond and sliced fruit.

Suggestion: Using this basic sponge cake recipe, you can make a roulade, just have to bake it in a shallow rectangular cake tin.
You can fill the roulade or sponge with raspberry mousse ( blend whipped cream with raspberry puré).
You can use any type of fruit and decorate it as you wish.

Pré-aquecer o forno a 200º e untar uma forma de bolos com manteiga e farinha;
Em banho maria derreter o chocolate com a manteiga em lume brando e ir mexendo;
Depois dos dois ingredientes anteriores estiverem bem derretidos e se ter uma consistência líquida adiciona-se o açucar e mexe-se muito bem;
Deixar arrefecer um pouco antes de adicionar as gemas, para que estas não cozam ;
Adicionar as gemas uma a uma, e mexer muito bem, após cada adição;
Numa tigela, bater as claras em castelo ;
Deixar arrefecer o bolo e servir a gosto.
